Roasted Carrots 

the ingredients

8 small carrots

  A tablespoon of olive oil

  A tablespoon of honey

A tablespoon of thyme leaves

Salt and pepper to season

How to prepare

Preheat the oven to a high temperature.

In a bowl, add the carrot seeds, add olive oil, honey, and a pinch of thyme leaves.

Put the carrots in the oven tray and let them cook until they are brown in color and are cooked through

How to prepare

Preheat the oven to a high temperature

In a deep bowl mix the flour, whole wheat flour, instant yeast, cinnamon, nutmeg, ginger and salt.

Beat the eggs with the sugar, then add the oil, pineapple juice and vanilla

Mix the flour mixture with the egg and sugar mixture and beat well until all the lumps are gone

We add grated carrots and walnuts

Put the mixture in the muffin cups for baking about three tablespoons per cup

Put it in the oven until it cooks well.

Meanwhile we prepare the frosting, whisk the cream cheese with yogurt, maple syrup and vanilla until we get a sticky cream.

Keep the cream in the refrigerator until the muffins cool down well

We decorate the cold cream muffins with a pinch of coconut to decorate!
